Spec — water, ethanol, grain strength

Ethanol spec

  • Start 5–8% ABV for surface; up to 10–12% for submerged (strain-dependent K. europaeus).
  • Dilute high wines with dechlorinated water; chloramine kills AAB.
  • Dilution: C1V1 = C2V2 — see Lab calculator. Example: 100 L 12% → 7% needs 71 L water: (12×100=7×171).

Water & grain

  • Hard water (Ca >150 ppm) + acetic acid → calcium acetate haze; soften to <80 ppm for clear spirit vinegar.
  • Grain strength = 10×% — US pickling shorthand. 50 grain = 5%.
  • Label: diluted essence must state final % after dilution (FDA CPG 525.825).

Oxygen & heat — the two plant constraints

O₂ demand

1 L pure ethanol → 385 L O₂ (pure) → ~1,830 L air at 21% O₂. A 50 m³ acetator at 10% acidity cycles ~5,000 m³ air/day — that is why submerged turbines are sized in kW, not RPM.

Monitor dissolved O₂ >2 mg/L; blip to 0 for 30 min can crash Komagataeibacter. Keep backup blower.

Exothermic — cool it

ΔH ≈ −494 kJ/mol ethanol — ≈400 kJ per L of 5% vinegar. A 10,000 L acetator at 24 h cycle must shed ~150 kW continuously. Plate exchangers pre-warm incoming feed while cooling the broth; see Sustainability −30–50% steam.

Setpoint: 28–32 °C submerged, 20–25 °C Orléans. Above 35 °C AAB growth drops 40%.

SOP — one page you can laminate

  1. Start-up: charge 1/3 mother + 2/3 diluted ethanol (target 5–6% ABV + 4% acidity), aerate 30 min, verify DO >3 mg/L, temp 30 °C.
  2. Daily (submerged): log T, DO, acidity (titration), foam; feed 10–15% of volume when acidity climbs <0.3%/h. Listen — healthy acetator smells sharp apple, not buttery (diacetyl = stress).
  3. Harvest (semicontinuous): when residual ethanol 0.2–0.3% and acidity at strain ceiling (12–15% for K. europaeus), discharge 1/3, replace with fresh feed, keep aeration on.
  4. Finish: coarse filter → sterile 0.2 µm or pasteurize 60–65 °C → dilute to label % with soft water → bottle. Retain 10% as next mother.
  5. Shut-down / power loss: keep aeration on UPS 30 min minimum; if DO crashes, re-inoculate with mother — do not restart dead broth.

Theory: 1 L pure ethanol (0.789 kg) → 1.029 kg acetic acid → ~20.6 L at 5% (100% efficiency). Practical: 85–95% in plant.
