Clostridium botulinum cannot grow below pH 4.6. Shelf-stable acidified foods (US 21 CFR 114, Codex CXS 162) must hold equilibrium pH ≤ 4.6 — in practice recipes target ≤ 4.2 to allow meter error. For refrigerated quick pickles pH still governs texture and safety.
Salt and sugar change taste and water activity, but only acetic acid lowers pH. Low-acid vegetables (beans, beets, peppers) dilute the brine, so final acidity depends on the ratio of vinegar to total volume, including vegetable water.
Acetic acid is conservative: final % = (vinegar mL × vinegar %) ÷ total mL. Sugar/salt not counted toward acidity. For shelf-stable canning, use only tested recipes; this tool is for quick-pickle estimation.
Rule of thumb: lab vinegars ~5% ≈ pH 2.5 neat; brines near 2.5% often land near pH 3.2–3.8 depending on vegetable buffering. Meter verification required for canning. This calculator assumes no buffering — real pH will be higher if pack is dense with low-acid veg.
Tip: to lift acidity, increase vinegar proportion or use 6–7% wine vinegar. For 500 g cucumbers in a 1 L jar, 300 mL displacement is a reasonable estimate.
