Jiangsu Hengshun China #1
Zhenjiang, 1840 — maker of Chinkiang (Zhenjiang) aromatic vinegar. Glutinous rice + wheat bran + big qu, solid-state pits, aging ≥6 months. Listed in Shanghai, state-owned heritage.
Signature: Hengshun Chinkiang 6° — amber, slightly sweet, the archetype for dumpling dip.
Yield: dozens of hectares of outdoor aging tanks; export to 60+ countries.
Shanxi Shuita / Zilin Shanxi matured
Taiyuan / Qingxu — sorghum + pea/barley daqu, smoked pei, “sun in summer, ice in winter” concentration. Shuita (“Water Tower”) brand dates to 1428 lineage claims; Zilin runs 100+ aging pots.
Signature: Shuita Aged 8-year — >6% total acid, smoky-umami, almost black.
Acetum (Modena) IGP giant
Modena — founded 1906, now via Clessidra/De Nigris group. Largest Balsamic IGP bottler; also holds Tradizionale consortium membership. Must + wine vinegar, ≥60 days wood, isotopic auditing since 2024.
Signature: Acetum Balsamic IGP 3-year Invecchiato; also bulk for private label.
De Nigris 1889 & Ponti
Northern Italy — De Nigris (Modena, 1889) and Ponti (Ghemme, 1787) are the two premium IGP houses most visible in EU/US supermarkets. Both run wood-library cellars for Riserva lots.
Signature: De Nigris Oro, Ponti Balsamico Riserva 5-year; also classic white/red wine vinegars.
Carl Kühne & Burg Groep
Berlin / Heerhugowaard (NL) — Europe’s spirit-vinegar workhorses. Kühne (1722) and Burg supply distilled 10–20% essence and Eubiona bio line. Feedstock: agricultural ethanol (beet/wheat), not wine.
Signature: Kühne 5% “Weinessig” (wine) vs 25% Essig-Essenz (dilute at home) — textbook grain-strength labeling.
Martin-Pouret (Orléans)
Orléans, 1797 — the last Orléans-method house in the historic capital. Oak barrels 2/3 full, 20–25 °C, fraction drawn like a solera. Also mustard via Orléans wine vinegar.
Signature: Orléans oak-aged sherry and wine vinegars — the aromatic-retention reference for method B.
Castelo (Brazil)
Jundiaí, SP — Latin America’s largest. Cane and fruit vinegars under Gallo, plus bulk for conservas and foodservice. Sugarcane juice base gives grassy-sweet sharpness distinct from distilled.
Signature: Castelo white cane 4% for Brazilian vinagrete and ceviche de lula.
Aspall & Bragg
Aspall, Suffolk — 1729 cyder house, now Molson Coors, stainless acetification but heritage apples. Bragg (USA, 1912) popularized “with the mother” ACV in the wellness era.
Signature: Aspall Organic Cyder Vinegar; Bragg ACV 5% raw unpasteurized.
