Brand pyramid — what justifies the price

Commodity — consistency

Sell grain strength and clarity (50 grain = 5%). Claim: “pickling grade, 5% acidity, for canning.” No story needed — price wins.

Example: White House 5% distilled — private-label leader.

Premium — origin + wood

Sell wood + age: “6% sherry Reserva, 2 y in PX bota.” Label wood type, solera age, and village.

Ponti/De Nigris 3-y Invecchiato — Modena + 60-day wood claim.

Heritage — law + time

Sell law + time: numbered seal, consortium, Giugiaro bottle, 12/25 y, isotopic audit. Price is scarcity (100 kg grapes → 2 L).

Giusti Extravecchio, Acetum Tradizionale — numbered, audited.

Retail grocery

Private label pays volume, squeezes margin 20–30%. Need 5% acidity, barcode, SRP $3.99. Slotting fees apply.

Foodservice / B2B

20 L cubitainer, 10–15% spirit essence diluted on site. Mizkan Owensboro $156M plant feeds chains. Spec: grain strength + COA per lot.

DTC & Amazon

Story sells 250 mL at $14 where retail would demand $8. Requires video, tasting notes, bundle (3-pack), subscribe & save. Handle glass breakage 2–3%.

Export

Modena IGP export 92% of volume — US/Japan/Germany top. Requires Codex CXS 162, isotopic dossier (2024+), and local importer’s allergen translation. Paombong export stalls on “nipa” not in EU novel-food list — needs batch export via specialty importer.

Market & farm shop

Tasting is everything: 5 mL neat in spoon, bread, oyster. Sawsawan bowl at table sells sinamak faster than any flyer. FEATR video sells Paombong DTC better than any certification.

  • Tasting card: use sensory wheel + 20-pt sheet at market; let customer score. 14+/20 converts.
  • B2B sample: 60 mL with COA (acidity, pH, grain, sulfites) + recipe card (adobo, sawsawan) — chef buys the dish, not the bottle.

Export checklist — before you ship

  1. Verify acidity ≥ market minimum (US 4%, EU 6% wine, PH 4%). Titrate lot — see Lab.
  2. Label: final %, substrate, allergen (barley/milk/sulfites), lot, best-before, importer address.
  3. For IGP/PDO: consortium seal + isotopic dossier; for “naturally fermented” PH: BFAD certificate vs artificial.
  4. Channel price: retail SRP → wholesale 50% → distributor 35% → COGS — check margin calc above.
