These frameworks matter commercially: IGP/PDO enforcement underwrites Modena’s export premiums, and Spanish regulators police “Jerez” labeling globally.

Authenticity & adulteration science

A PDO is a legal claim — isotope chemistry is the audit. The 2024 update to the Modena IGP disciplinare wrote deuterium and carbon ratios into law for the first time for vinegar.

SNIF-NMR & IRMS

Site-specific natural isotope fractionation (SNIF-NMR) measures D/H at methyl vs methylene sites in acetic acid; IRMS measures 13C/12C and 18O/16O. Synthetic acetic acid (from fossil ethylene) and cane-sugar acetic acid carry distinct fingerprints versus grape-must acetic acid. The IGP now publishes allowed windows for (D/H)CH3 and δ13C.

What it catches

  • Dilution + caramel — watering down and recoloring to hit 6% looks right on titration but fails δ18O and extract.
  • Exogenous acetic acid — spiking with glacial (methanol carbonylation) collapses D/H.
  • Foreign musts — apple or cane sugar to stretch grape must shifts δ13C by >2‰.

Enforcement timeline

  • 2015 — Japan GI registry launches; Kagoshima kurozu row jars enter audited system.
  • 2019–2023 — EUIPO + ICQRF seize “balsamic” condiments in DE/UK/US for evocative misuse of “Modena”.
  • 2024 — Modena IGP amendment adds 10-year-old vinegar share + isotopic windows; transition period to 2026.
