Spontaneous surface fermentation

The oldest

Sugary juice or weak alcohol left open to the air picks up ambient AAB. Slow (weeks–months), unreliable, charming. Still how much household vinegar in the tropics happens — coconut sap, palm wine, pineapple peels simply turn.

The Orléans method

Barrel culture

Oak barrels filled ~2/3 with wine (alcohol diluted to ~5–7%), inoculated with live vinegar; air holes above the liquid line, cellar at 20–25°C. A fraction is drawn off and replaced with fresh wine — effectively the world’s first continuous culture. Weeks per cycle; aromatic retention is excellent.

Fixed-bed generators

“Quick process”, 1823

A vertical vat packed with birch twigs, beech shavings, or basketware. Alcohol trickles down as air rises; bacteria colonize the packing. Each pass takes hours; several passes reach target acidity. Cooling coils mid-column are critical. Still valued for delicate aromas in some wine-vinegar plants.

Submerged fermentation

The industrial workhorse

Frings-style Acetators churn air through broth with self-priming turbines, run semicontinuously: when acidity nears the strain’s ceiling, part of the charge is harvested and refilled, keeping ethanol low. Cycle time ~24–48 h vs weeks for barrels; modern strains push distilled vinegar to 15–19% acidity.

Solid-state fermentation

East Asia’s signature

Chinese and Japanese cereal vinegars often run all three stages — saccharification, alcohol fermentation, acetification — in one vessel, in a moist solid mash rather than liquid. Steamed sorghum/rice/wheat bran mixed with qu/koji is packed into pits, jars, or turned heaps; aging follows for months under cover. Shanxi matured vinegar adds a smoked-mash step and year-long conditioning (“sun-dried in summer, ice removed in winter”), concentrating it well past 6% total acid. Kagoshima’s tsubozukuri kurozu ferments brown rice + koji + water in 54 L ceramic pots outdoors over ≥1 year, stirred with bamboo poles.

Finishing

  • Racking and coarse filtration; sterile filtration (removes eels and cells) or pasteurization at 60–65°C stabilizes the product.
  • Unpasteurized “raw” vinegar retains live culture and may form a new mother in the bottle — a feature for some markets, a defect for others.
  • Blending, caramel color (explicitly allowed in Balsamic Vinegar of Modena IGP), dilution to labeled strength, and packaging complete the process.
